100% Creamy Mushroom Soup

This was such a last-minute video. I had already decided to make this creamy mushroom soup as a side for my family's dinner over the weekend then it struck me that I should make a video for this recipe. This mushroom soup is a family favorite, and I have been making it for years. The reason I called this 100% creamy mushroom soup is because the soup and cooked mushrooms are blitzed together in a blender to release all the sweet and earthy flavors. The soup is so smooth and creamy so that is why I do not need to add any cream. By blending the soup together with all the cooked ingredients, we get 100% mushroom flavor in every mouthful and it is incredibly delicious.

1.  I used portobello mushrooms because they were on special offer when I bought them from the supermarket. Portobellos are simply mature cremini (baby bella) mushrooms, so they give a deep, meaty and earthy flavors. I gently scraped away the dark gills under the cap so that the soup color will not be too dark. However, this is optional if you do not mind the dark color. To lighten up the soup color a bit, I mixed with some white button mushrooms. Just slice up the mushrooms before cooking.

2.  In a pot, add the butter, oil and melt over medium heat. Then add the onions, garlic and cook until softened, about 2 to 3 minutes.

3.  Add the mushrooms and cook for about 10 minutes, stirring regularly. It is not necessary to brown the mushrooms.

4.  Add the chicken stock, fresh thyme and bring to a boil. Then lower heat and simmer for about 10 to 15 minutes uncovered.

5.  Transfer the soup and cooked mushrooms into a blender. You can reserve some nice mushroom slices for garnishing but it's optional. Blitz until smooth and creamy. This is how we get 100% mushroom flavor.

6.  Return to the pot, add salt, black pepper to taste and let it simmer for about 1 to 2 minutes. Adjust taste accordingly. It is not necessary to add whipping or heavy cream as the soup is already creamy. However, if you still wish to add some, this is the time to add it.

7.  Dish up into serving bowls, drizzle with olive oil and cream but it's optional.

Ingredients

Portobello mushroom = 400 g (You can use any suitable mushrooms)

White button mushroom = 200 g (You can use any combination of mushrooms)

Chicken stock = 800 ml (3 1/3 cups)

Yellow onion = 1 medium (chopped)

Garlic = 4 cloves (minced)

Butter = 30 g (2 tbsp) (Salted or unsalted)

Olive oil = 30 ml (2 tbsp)

Salt & black pepper = to taste (homemade chicken stock may require more salt as they are unsalted whereas store-bought chicken stock is already salted hence, may require less salt. Just taste and adjust accordingly)

Fresh thyme = a few sprigs
