90-Second Sunflower Seed Bread

After publishing 5 recipes on 90-second keto bread here, this is a new one with 100% sunflower seeds. With my regular sunflower seed bread, it is fine to use ground raw sunflower seeds as the bread is baked for 1 hour. However, for this microwave version, I needed to roast the seeds first before grinding as the raw ones makes the bread taste bitter due to the short cooking process in the microwave oven. The roasting process makes this bread smell and taste nutty, just like peanuts but there's no nuts involved.

1.  Add the dry ingredients into a bowl and mix to combine.

2.  Add the wet ingredients and mix until well combined.

3.  Transfer the batter or dough into a 5x5 inch glass baking dish which is microwave oven safe and line with parchment paper.

4.  Spread evenly.

5.  Microwave for 90 seconds. It is done when the top feels firm. I am using a 900-Watt microwave. As not all microwaves are the same, you may need to adjust the timing accordingly. If you prefer to use the oven, you can bake it for about 9 to 10 minutes at 350 F or 180 C. However, the texture will be different due to difference in cooking method.

6.  Remove bread and parchment paper. Let it cool slightly before slicing.

7.  Slice equally into half.

8.  The texture of the version with psyllium husks is soft, firm and more bread-like.

9. The texture of the version without psyllium husks is soft and fluffy and even though it is a bit fragile, but it could still hold reasonably well.

10. The texture of the eggless with psyllium husk version is heavy and dense as expected without eggs.

11.  All 3 versions are crispy when toasted. However, the eggless version takes longer to toast up.

12.  You can enjoy these 90 seconds bread as sandwiches, grilled cheese or toasts.

13.  For this 90-second sunflower bread, it is necessary to add the apple cider vinegar (unlike all other 90-second bread) in order to neutralize the color reaction.

14.  It is also necessary to roast the sunflower seeds first before grinding as the raw ones makes the bread taste bitter when cooked in the microwave oven for a short period only. Just roast the seeds for about 10 to 12 minutes at 340F or 170C until browned and fragrant. Then use a multi grinder to grind until powdery. It's fine if there are still some chunks. They actually smell and taste nutty, so good!

Baking powder = 4 g (1 tsp)

Whole psyllium husks = 5 g (1/2 tbsp) (Ground until half its original volume then weigh it)

Fresh egg whites = 1 large (37 g)

Apple cider vinegar = 5 ml (1 tsp) (OR white vinegar / lemon juice)

Hot or boiling water = 30 ml (2 tbsp)

(2. WITHOUT PSYLLIUM HUSKS)

Ground roasted sunflower seeds = 50 g (1/3 cup + 1 tbsp)

Baking powder = 4 g (1 tsp)

Fresh egg whites = 1 large (37 g)

Apple cider vinegar = 5 ml (1 tsp)

Room temperature water = 15 ml (1 tbsp)

(3. EGGLESS WITH PSYLLIUM HUSKS)

Ground roasted sunflower seeds = 80 g (2/3 cup)

Baking powder = 8 g (2 tsp)

Whole psyllium husks = 9 g (1 tbsp) (Ground until half its original volume then weigh it)

Apple cider vinegar = 10 ml (2 tsp)

Hot or boiling water = 45 ml (3 tbsp)
