Nutty Chocolate Coconut Balls
Traditional chocolate coconut balls are made of just 3 ingredients i.e. chocolate, shredded coconut and condense milk. I could make a low carb version of this in the future but for now, I thought it would be more delicious to make a nutty version because most of us love some crunch. This Nutty Chocolate Coconut Balls are super easy to make, and they are great as a healthy snack, dessert or even as gifts. They have a perfect combo of soft chocolate filling, crunchy nuts and chewy coconut - incredibly delicious!
DIRECTIONS
1. For best results, weigh the ingredients using a digital scale.
2. In a bowl, add all the dry ingredients and mix well to combine.
3. Add all the wet ingredients and mix until a thick crumbly dough is formed.
4. Use a cookie scoop or measuring spoon to ensure consistency. Roll into a ball then place on a baking tray lined with parchment paper. Wet your hands with water or grease for easier handling.
5. Coat all the balls generously with desiccated or shredded coconut.
6. This recipe yields about 26 balls at 20 g each.
7. Chill in the fridge for about 1 hour to firm up the texture a bit. You can also freeze for a shorter time.
