Tossed Noodles (Lo-Mein)
I love eating dry noodles aka tossed noodles or lo-mein. There is literally no cooking for the mixing sauce and the noodles. Of course, it depends on what you are going to pair it with. In the video, I used a grilled steak which is pretty quick to cook in probably about 10 minutes from start to finish. If you want it easier, then just boil some chicken, seafood or vegetables. If you prefer a spicy version, the crispy garlic chili takes it to the next level. And that sizzling oil is what makes the sauce so flavorful. This lo-mein is not only super easy to dish up but it is guilt free, too as we will be using zero carb konjac or shirataki noodles. This recipe is among the 60 recipes from my cookbook. The Ultimate Low Carb Konjac Rice & Noodle Cookbook features 20 recipes each for rice & congee, noodles and pasta with comprehensive tips and tutorials. The link to purchase is at the Cookbook section here.
1. Prepare the konjac noodles by rinsing and draining then dry roast in a pan over medium heat to remove excess water. This step is important as it will allow the noodles to absorb all the flavors. Once no water is visible in the pan, remove the noodles and set aside.
2. Make the mixing sauce by adding all the ingredients into a small bowl and mix well. Adjust taste accordingly.
3. Add the sizzling oils into a small saucepan and heat it up until smoky hot. Then pour the hot oil into the mixing sauce. There will be a big sizzle which is going to make the sauce so flavorful. Quickly stir to mix until well combined.
4. Pour the mixing sauce onto the prepared konjac noodles and toss to mix until well combined.
5. Top with any cooked meat, seafood or vegetables then sprinkle with chopped spring onions.
6. Serve immediately.
