Cheese Crackers (aka Cheez-Its)
If you're looking for something bite sized, crispy, flaky, cheesy and savory, this is it! These cheese crackers resemble Cheez-Its which is a highly popular US brand of cheese crackers. I made them into a keto version using almond flour which is suitable for a crispy texture. I would not recommend using coconut flour as it will not provide a crispy texture. Cheez-Its are typically tiny in size so it is best to make them into 1-inch squares. You can make them into normal square or rectangle sizes, but they may not turn out to be as crispy. So, bite sized is the best here. As the star ingredient is cheese, it is recommended to use aged or extra mature sharp cheddar cheese for better flavor and texture. But having said that, you can actually use any other suitable cheese or a combo of cheese of your choice. You can also add other flavorings such as smoked paprika, garlic powder, chili flakes, pepper etc.
1. For best results, weigh the ingredients with a digital scale.
2. Preheat the oven at 350 F or 180 C.
3. In a bowl, add the flour, xanthan gum and salt. Mix to combine.
4. Add the cheese, cold butter and mash with your fingers until crumbly. You can also use pastry cutter or food processor.
5. Add the cold water and mix everything into a dough. Knead the dough for a while to incorporate all the ingredients well. Then shape into a ball.
6. Divide the dough into two portions.
7. Brush some oil on the bottom parchment paper so that it's easier to remove the cut dough but this is optional. Roll one portion of the dough between two parchment papers. Roll the dough until as thin as possible. The thinner it is, the crispier it will be. Then cut the dough into 1-inch squares and place on a baking tray lined with parchment paper. Continue until all the dough is used up.
8. Use the flat end of a wooden skewer to make a hole at the center. This is to allow the steam to escape during baking.
9. Bake at the middle rack for about 12 minutes or until golden brown.
10. Cool completely. The crackers will become crispy when completely cooled.
11. These crackers can be stored in airtight containers at room temperature for about one week or more.
