Chocolate Loaf Cake with Chocolate Fudge Frosting

If you love chocolate, you will definitely love this cake as it is super chocolatey. It is based on my extra moist chocolate cake. Making this cake into a loaf, makes it easy to cut and the rich, smooth, fudgy chocolate frosting takes it to the next level. So easy to make and so delicious.

1.  For best results, weigh the ingredients with a digital food scale.

2.  Preheat the oven at 340F or 170C.

3.  In a big bowl, add all the dry ingredients and mix until well combined.

4.  Add all the wet ingredients and whisk until well combined. Set aside.

5.  Mix the hot water and instant coffee powder together and stir until dissolved. Then pour into the batter and whisk until well combined. The batter is quite runny which is normal.

6.  Transfer the batter into an 8.5 x4.5-inch loaf pan, greased and lined with parchment paper.

7.  Bake for about 40 to 55 minutes or until a wooden skewer comes out clean.

8.  Meanwhile, make the chocolate fudge frosting. Add all the ingredients into a small pot. Melt slowly over a very low heat. If the heat is too high, the fat will split from the chocolate so everything will look curdled. Hence, be careful with the heat. You may want to take the pot on and off the heat. Stir until just melted, smooth and thick. Chill in the fridge until needed.

9. This cake may sink a bit in the middle, but it is fine. Once done, let it cool completely before frosting.
