Cheesy Garlic Bread Rolls

I have been seeing a lot of viral videos on the internet showing how to make Cheesy Garlic Cloud Bread Rolls with just egg whites, garlic powder and cheese. They looked great, nicely puffed up straight out of the oven and have an incredible tear. However, they don't really show you how these cloud bread rolls will deflate shortly after baking, making them look unappealing. I am not a fan of cloud bread as it feels like eating air or paper. Hence, I improved on the structure so that these rolls will not deflate after baking and the texture is firm enough to taste like a bread. So, by adding a bit of almond or coconut flour, the rolls became firmer and do not deflate at all. They are still super light with soft, airy crumbs and crispy crust. They also have an incredible tear with a great cheese pull, so delicious!

1.  For best results, weigh the ingredients with a digital food scale.

2.  Preheat the oven at 350F or 180C.

3.  In a bowl, add the egg whites, garlic powder, salt (if using) and beat until stiff peaks at medium to high speed.

4.  Add the flour into the meringue and fold gently to combine. Do not simply mix as it will break the meringue.

5.  Finally, add the cheese and fold gently and briefly.

6.  Scoop onto a baking tray lined with parchment paper. I used an ice cream scoop and got 6 servings.

7.  Bake at the lowest rack for about 15 to 20 minutes or until golden brown.

8.  These rolls can be enjoyed straight out from the oven or warm. They can also be kept at room temperature for a few days provided if you have a cool and dry climate. Otherwise, it is best to refrigerate earlier for up to a week or freeze for up to 3 months or more.

9.  These rolls can be reheated in the oven or mini electric oven, and the crust will crisp up with a melty cheese in the crumbs.

Egg whites = 3 large (105 g)

Almond flour = 60 g (1/2 cup) (OR 24 g / 3 tbsp Coconut flour)

Garlic powder = 4 g (1 tsp) (You can add more for a stronger garlic flavor)

Shredded mozzarella cheese = 112 g (1 cup)

Salt = A pinch (This is optional. I find that some shredded mozzarella cheese brands are saltier than others so please adjust accordingly.)
