Strawberry Crumble Bars

This is such a great way to use fresh strawberries. These strawberry crumble bars are soft, buttery and tender with a layer of juicy strawberries. They are great as a treat, snack or dessert. The best part is that it is super easy to make without any tools required - just mix, bake and enjoy!

1.  For best results, weigh the ingredients with a digital scale.

2.  Preheat the oven at 350F or 180C.

3.  Make the crust. Add all the ingredients into a bowl (except the melted butter). Mix to combine then add the melted butter and mix until crumbly. Line an 8x8-inch pan with parchment paper. Transfer the crumbs into the pan but reserve 1/3 for the topping. Bake for about 15 minutes or until the edges are browned. Set aside.

4.  Make the strawberry filling. In a bowl, add all the ingredients and mix to combine. Pour over the baked crust and spread evenly then top with the reserved crumbs. Bake at the same temperature for about 25 to 30 minutes or until the crumbs are golden brown and the strawberries are bubbling around the edges. Cool for a bit then chill in the fridge for 1 hour to set or firm up.

5.  Cut into 9 or 12 servings.

6.  Chill these bars in the fridge for up to 1 week or freeze for up to a few months. They can be eaten straight out of the fridge and taste really good actually as the crumbs becomes crispier.

INGREDIENTS FOR CRUST (ALMOND FLOUR VERSION, as shown in video)

Almond flour = 360 g (3 cups)

Monk fruit = 100 g (1/2 cup) (OR any keto friendly sweetener. If you prefer not to have a grainy texture after chilling, you can use powdered allulose. If you prefer it to be sweeter, you can increase to 150 g)

Salt = 3/4 tsp

Melted unsalted butter = 180 (3/4 cup)

INGREDIENTS FOR CRUST (COCONUT FLOUR OPTION)

Coconut flour = 180 g (1 1/2 cups)

Monk fruit = 80 g (1/2 cup) (OR any keto friendly sweetener. If you prefer not to have a grainy texture after chilling, you can use powdered allulose. If you prefer it to be sweeter, you can increase to 120 g)

Salt = 3/4 tsp

Melted unsalted butter = 180 (3/4 cup) (You can also use coconut oil or any suitable keto friendly oil)

Fresh strawberries (cubed) = 332 g (2 cups) (It is best to use fresh strawberries as frozen ones may make the bars too soggy)

Fresh lemon juice = 10 ml (2 tsp)

Coconut flour = 8 g (1 tbsp) (This helps to thicken the juices and prevent sogginess)
