Small servings are great for individuals living alone or for those who are the only ones living low carb/keto in the family. They are also great for portion control or to satisfy any last-minute cravings without worrying about leftovers. It is super easy to make, and you can use either a microwave or conventional oven to cook them.

1.  In a bowl, add all the dry ingredients and whisk to combine.

2.  Add all the wet ingredients and whisk to combine. The batter is quite thick.

3.  Transfer the batter into a 5x5 inch glass baking dish lined with parchment paper. You can also use ramekins, cups or any microwave safe molds. Spread evenly.

4.  Cook in a microwave oven for 2 minutes at 30-second intervals. You can use a toothpick to check for doneness. The result is a soft, fluffy, flavorful and delicious cake.

5.  I made another batch and scoop the batter into 3 small muffin cups. Then bake in a preheated oven at 340F or 170C for 15 minutes or until a toothpick comes out clean. The baked muffins are delicious with a crisp texture on the outside and tender inside.

6.  These milk chocolate butter cake, and muffins can be enjoyed warm.
